Das mit 'Bearbeiten' habe ich da nicht weiter verfolgt, zumal weiter unten im Kontextmenü steht ja 'Edit with Notepad++'. Das hat mir da gereicht.
Habe mir da jetzt auch mal den Zweig 'HKCR\SystemFileAssociations\text\shell\' mal angeschaut und finde es interessant, dass das Notepad++ gar nicht existiert, obwohl 'Öffnen' Notepad++ öffnet. Da steht für '~\shell\open\command' nach wie vor das Windows Notepad eingetragen, was aber offensichtlich ignoriert wird.
Allerdings wurde es hier eingetragen:

Habe da jetzt schonmal, wie man sieht, '\shell\edit\command' hinzugefügt und 'Bearbeiten' im Explorer öffnet jetzt auch Notepad++.
Der Zweig 'HKCR\SystemFileAssociations\text\shell\' bleib dabei unverändert. Dort verweist alles noch auf das Windows Notepad.
Das finde ich so erst einmal interessant, zumal es so aussieht, als ob 'Applications' Vorrang vor 'SystemFileAssociations' hat.
